Salads / Ham

Just wondering how you zing up your salads... I always found them quite boring but have made a ham salad for lunch tomorrow as it's handy to take to work... So far I've lettuce, rocket, 3 slices of crumbed ham, cucumber+a red onion... Would be nice to get a few ideas...

Also is crumbed ham free on EE or just plain ham?

Your crumbed ham is still free :)

How about adding pasta or cous cous? You can get the flavoured sachets so there is variation there.

Low fat Honey mustard dressing is always worth spending a sneaky syn on for me, a little bit goes a long way in the flavour department.

celery, beetroot, gherkins, pickled onions, olives (hexb or syn) tomatoes, boiled eggs, apple, pomegranate seeds, salad leaves, spinach, corriander (fresh torn up leaves really jazz up a plain old pile of lettuce) roasted peppers/sweet potato/ butternut. Just steer clear of avacado, theyre ridiculously high syn.
 
Thanks for that... Def need to make my salads a lot more interesting coz it's handy for lunches when I'm out at work. Great the crumbed ham is free too :) x

The rice is available from Sainsbury's. Very nutty taste!

Pete’s Red Carmargue Rice salad (2013)

Serves 2

Ingredients

1 Bag of watercress (s) (sff)
1 Tomato, sliced (s) (sff)
1 Cucumber, sliced (s) (sff)
2 Eggs (ff)
30g Strong cheddar cheese (1Hea/2=1/2Hea per person)
100g Red Carmargue rice (ff)
120g Tin of sardines in tomato sauce (ff)
S & P

Method

Boil the rice as per instructions on packet, strain & cover, allow to cool.
Boil eggs for 6 mins, peel & set aside.
Prepare the other ingredients & plate up.

Hi, just come across this.. I too don't like "plain" salads very much, however if you boil down some balsamic vinegar with sweetener, until it goes sticky, it makes a really nice dressing, and not only for salads too, I've had it as a sauce with fish too! Must say though that it smells your kitchen out for a little while :-/ Xx
