mini quiche

Wow, I've just made my first batch of mini quiches, and they are blinking lovely. Not sure I will be able to not eat them all :) I lined each muffin tin with a slice of wafer thin ham to make a case and I am really impressed.
 
300g of fat free cottage cheese with 4 eggs. onions and mushrooms ( pre cooked ), all mixed together then line a muffin tin with a alice of wafer thin ham in each, spoon in the mixture and cook for 25 to 30 mins. It makes about 12 yummy mini quiches. But you can add whatever free food you fancy.
 
I've never tried cottage cheese, never really fancied it but I am going to give this a try.
 
I like to add smoked bacon and finely diced tomato to mine and some of my HexA laughing cow light triangles cut up and put in the middle, gives a lovely cheesy centre.
 
I made these today - tuna and sweetcorn with my hexa of cheddar and used fat free yoghurt instead of cottage cheese (it was what I had in the fridge) and they were yummy! My friend liked them and thought it was a great idea using muffin cases as she's severely wheat intolerant. I'm not a massive quiche fan and usually it's the pastry that helps me eat it but I've just finished the last two for a snack before my dance class and will definitely be making them again.
