Ingredients

4 chicken breasts
25g of light cream cheese/ Philadelphia for each chicken breast. Per 25g- 2 syns for light
8 rashers of bacon, all visible fat removed, I prefer smoked bacon - 1.5 syns for lightest Syn values are the same for all days
- 3 syns for original

Method

Heat the oven to 200 ˚C conventional, 190 ˚C fan or gas mark 6 and have ready a baking tray or tin.

Cut a slit into the side of each chicken breast to form a pocket and then open out to form a butterfly.


Spread the cream cheese into the middle of the open chicken breast. Season well and fold over, pressing the sides together.


Wrap each chicken breast with bacon. Place on the baking tray and bake for 20 minutes for a small chicken breast or 25-30minutes for a larger chicken breast, ensuring the chicken is thoroughly cooked through before serving.


serve with baby potatoes and greens

To make this extra delicious use dairylea light and make up a batch of SW BBQ suave to pour over the top. Blooming lovely. I serve with rice and the sauce mixed in to the rice is divine.
 
Can someone tell me how many syns is in the light Philadelphia? Also could I use my bread as healthy extra b to make breadcrumbs for a Kiev instead of using bacon some night for a change?
 
i've just realised in my ingredients list all the philadelphia syns are jumbled up!

and as for the the bread i think so yeas. sounds like a good idea. would you use a beaten egg to get the breadcrumbs to stick? im not sure how to do them?
 
I've not done breadcrumbs before but I would coat he chicken in the egg and them in the breadcrumbs.

Thanks for the syn values I ended up finding out.

I made them last night with the bacon and it was gorgeous.
 
oh good, im going to try the breadcrumb one tomorrow :)
 
I think I'll try it at the weekend too :) let me know how it goes.
