Hello!

I've relied heavily on this site since joining Slimming World over a year ago but i've finally taken the plunge and joined, yay!

Anyhoo... It's my first wedding anniversary on the weekend and we've just come back from a 2 week all inclusive holiday when i came off the diet completely. For this reason, i don't want to go out for food whilst i'm trying to lose my holiday weight.

I've made a rod for my own back really as my husband is used to homecooked food every day so i'm really struggling to think of a special enough menu to celebrate our anniversary.

Can anyone suggest anything that'll mark the occasion but not my waist line?

What would you normally have? Is it possible to make it sw friendly? I'd go along the lines of a really nice piece of steak! With sw chips, onions (or you could try making onion rings- some use smash of a hexb of bread), mushrooms etc. and syn some peppercorn sauce.
For pudding I would attempt a sw cheesecake- there's a few recipes for them on here but it's not something I have tried yet.
If you wanted a starter you could even do a prawn cocktail type dish and use one of two syns on the sauce- mayo & ketchup. Or a superspeed soup! Or a grilled chicken kebab type thing or stuffed mushrooms.
I'm getting carried away now lol. Hope this helps!
 
I think it def depends what kind if thing you would normally want
There is a gear chicken lived pate which you can serve with Melba toast.

Steak as above it chicken wrapped in Parma Han and then choose a sw dessert that you fancy. If you do steak there is a peppercorn sauce that is either free it low syns can't remember which.
But give us an idea of what you like would normally have on an occasion like this.
The other option is a Chinese or curry dish
 
For our anniversary meal I made mushroom pâté to start with heb bread. Stuffed pork fillet wrapped in bacon with roasted veg and SW roast potatoes followed by SW baileys mousse. The whole meal was around 7 syns and tasted delicious.
 
For us i'd do a prawn cocktail and syn a low fat sauce, then steak, mushrooms, salad and sw chips, the for dessert the 1/2 syn chocolate mousse with strawberries

Fluffy Chocolate Mousse

You'll be in heaven with this wickedly creamy dessert. And at only ½ Syn per serving you can easily have seconds (or thirds!)
Ingredients


  • 100g pot of quark skimmed milk soft cheese
  • 500g pot fat free natural fromage frais
  • 1 tbsp artificial sweetener
  • 1 sachet Cadbury Highlights
  • Ground cinnamon and cinnamon sticks to decorate
Method


  • Place the quark in a bowl with 400g fromage frais, the sweetener and Cadbury Highlights. Mix well, divide between four glasses and chill until needed.
  • Top each mousse with a spoonful of fromage frais and a dusting of ground cinnamon. Serve decorated with cinnamon sticks if you like.
Tip: For a change, this mousse makes a great cheesecake filling. Make the base with crushed amaretti biscuits (1 Syn each) and egg white, and set the filling with 2 tsp gelatine dissolved in a little boiling water.

The day i posted this i got a postcard through the post (1st anniversary, paper, get it?!) inviting me out and we had a greek meal.
Add this with comfort eating and a food festival and i have NOT had a good week.
 
Steak and chips... always the way to my fellas heart :)

Why not do a champagne sugar free jelly as a pud? Would be low syn xxx
