Someone suggested I keep a food diary here. So here I am. I always follow Green, as I'm vegetarian, but I'll try to remember to colour my diaries in green as well.

Yesterday (20.11.12)

2 Weetabix (HEB1) with 100ml skimmed milk (part of HEA1)
Tomato and Herb Mugshot (free)
Apple (free)
Grapes (free)
Baked bean lasagne (recipe below) (free, had a little low fat cheddar as HEB2)
Strawberries (free)
5 cups of tea (free) with skimmed milk (part of HEA1)
20g veggie gummy bears (3 syns)
Muller Light strawberry (free)

I won't be having the Muller Light again as I noticed it contains gelatine. However, The Joker and I just got back from Asda laden with syn-free vegetarian yoghurts.

Here's the recipe, think I found it on here and adapted it a bit.

Baked Bean Lasagne

Dried lasagne sheets
2 tins baked beans
1 tin chopped tomatoes
1 large onion
1 courgette
1 carrot
1 red pepper
3 tsp Very Lazy garlic
2 tsp vegetarian Worcestershire sauce (I use Biona, from my local health shop)
1 tsp smoked paprika
1 tsp mixed herbs
Fry Light
100g low fat cheddar

1. Preheat the oven to 200°C.
2. Finely chop the onion, pepper and courgette, and grate the carrot.
3. Spray a saucepan with Fry Light and fry the onion, pepper, garlic and courgette until soft. Add the carrot and cook for another minute.
4. Add the baked beans, chopped tomatoes, paprika, Worcestershire sauce and mixed herbs. Stir well and cook for another five minutes or so.
5. Layer the bean mixture and dry lasagne sheets in a rectangular pan. Top with the cheddar.
6. Bake for 20-25 minutes until it's all bubbly and delicious.
7. Try not to burn your mouth as you shovel it into your gob.

Serves 4. Free on Green, as long as you count the cheddar as a Healthy Extra.

This could be made vegan if you substituted the cheddar for vegan cheese. :D The Joker is not a vegetarian but he went back for THIRDS!

It had a really rich smoky, almost BBQ-ish flavour because of the paprika. The Joker tells me it's definitely on the "would nom again" list! :)

LOL my OH lets me know when he likes things too - he is always like when can we have that again !!

No need to feel piggy :) no one in my house likes mac and cheese so I never make it, but I do a lovely pasta were I chuck in loads of veg (peas, carrots, mushrooms, onion, courgette etc) and then stir in Kerry low low spread. Half a tub is one hea, so I chuck in a tub and a half for 3 adults and a toddler. Everyone loves it. And we aren't vegetarians but enjoy green days for the variety. That's aquickf and easy we recipe though that's adaptable to what your family like. :)

Lentil and bean shepherd's pie (recipe below)
Shape Delights 0% yogurt, Vanilla and Chocolate Sprinkles (1 syn)

4 cups of tea (free) with 50ml skimmed milk (part of HEA1)

Tasty tasty recipe, Frankenstein'd from several recipes found here and on the SW site:

Lentil and Bean Shepherd's Pie

2 carrots, grated
1 onion, chopped
3 garlic cloves, crushed
7oz red lentils
1 tin green lentils, drained
1 tin chopped tomatoes
1 tin baked beans
1 tin adzuki beans, drained
1pt stock made with Vecon
1 tsp thyme
1 tsp mustard powder
1 tbsp vegetarian Worcestershire sauce
salt & ground black pepper
7 or 8 medium potatoes, diced
Fry Light, for spraying

1. Spray a large saucepan with the Fry Light and cook the onion and garlic for 2-3 minutes until softened. Add the grated carrot and cook for a couple more minutes. Add both types of lentils and the stock and bring to the boil for five minutes.
2. Stir in the chopped tomatoes, baked beans, Worcestershire sauce and thyme and simmer until tender and the red lentils have almost disintegrated (mine took 20 minutes or so, your mileage may vary). Transfer to an oven-proof dish.
3. Meanwhile, cook the potatoes in a large pan of salted water with the mustard powder for 10-15 minutes until tender. Drain and mash, season to taste and spread over the lentil mixture. Make ridges in the potato with a fork.
4.Place in an oven for 25-30 minutes or under a hot grill for 2-3 minutes until golden brown and bubbling.

Serves about 6 (so you could freeze some for later!). Free on green.


Again, my meat-eating Joker said it was amazing and he'll be eating the leftovers tonight. :D

How you doing HQ? X saw your post in the DYJHIW thread and thought spoons? Yes someone took ALL my spoons yesterday!! Just had to come and say hi :)
I have the evil ME and spoons are very limited at the moment but just wanted to come and say hi :)

How are you managing activity? Swimming is definitely a good choice :)

DustQueen I have fibromyalgia and the Joker has ME so I very much empathise! I am definitely going to get back to swimming. I used to run, before it got bad, and I really miss running. :(

25 is not the end of the world, it still has some restraint you could have had 250 ;) x
God I miss the gym I used to love going to the gym *huff*
 
Heh, Wee Chum has a type of cerebral palsy as well, though you wouldn't know it to look at him aside from his 'magic glove' that helps his right arm to work properly. :)
 
Weighed in today, half a pound off. Stuck to plan so far today, am flexisynning tonight as I have a family meal out to go to and I want to enjoy it!
