Hey!

I'm Laura-Jayne, 25 years old and a British girl living in Kansas.

I've posted an Introduction, and started a Food Diary but I've decided to combine my Food Diary with a Weight Loss Diary to enable me to have an outlet for the thoughts swirling round in my brain regarding weight loss. I don't expect anyone to read or respond to this, but that's fine because sometimes just writing things down can help a person incredibly.

******************************************************************************************************************

Bit of back story of my weight issues:

I was a little chubby in my early teens, nothing out of the ordinary. Around 16, I lost a considerable amount of weight (admittedly, not healthily) and kept the weight off pretty much until I was 19/20. Around that time, I met a boy and started dating him. The story goes downhill from here.

It wasn't the typical 'everyone gets comfortable in a relationship and gains weight' kinda thing. I think he was literally 'feeding me up'. I'm not going to blame him entirely; at the end of the day, I opened my mouth and ate the food. However, I would cook healthy meals, and he would turn up, knowing I'd already eaten, with my favourite meals (Nando's etc). I couldn't resist. He would wake me up in the middle of the night and get me to go to Subway with him, and he'd buy me food even if I didn't want it. I had no self-control. The bigger I got, the happier he was - no one else would find me attractive this way, and he would constantly encourage me to not bother with any make up, not dye my hair certain colours incase it drew attention to me, which he wouldn't be happy about.

Not long after we started dating, the mental/emotional abuse began - and it was horrendous. I'm not looking for sympathy so I won't go into details but it was the worst few years of my life and the abuse wasn't always just mental/emotional.

(Positive part starts now!) Anyway, around 3 years in, I met an amazing guy (Stephen) on Twitter who quickly became one of my best friends. We spoke non-stop, and quickly developed feelings for one another - unfortunately, I lived in the UK, and he in Kansas, USA. Not long after, I finally broke up with my then-boyfriend, and Stephen booked a flight to come and see me in the UK. The rest, as they say, is history. He was everything I needed; we got engaged a year after meeting and a year and a half after that I moved to Kansas to live with him. On 25th January 2014 we got married, and I've never been happier.

******************************************************************************************************************

At my heaviest, I was 183+ lbs. Early in my relationship with Stephen, I made it down to 139lbs. Since moving to Kansas, I reached a highest point of 169lbs, and I am currently 166lb, and want to get down to 130lb.

That is a rough outline of my story, and this is my starting point for 2014. I'm not thinking of where I've come from, I'm looking at where I need to go.

I'm following my own yellow brick road...

I'm setting myself the target of remaining accountable for everything. If I mess up, I admit to it. I don't pretend it didn't happen, I don't let a bad day turn into a bad week. I will do this, by posting an honest report of everything I've eaten, everything I've drank and any exercise I've fit in.

Thursday 27th February

First day on plan! Felt extremely positive and spent the day writing out a shopping list and jotting down some recipes I want to try out as I came across them. I don't think Stephen was happy when he saw the list (I'm not allowed to work in the USA until I get my Green Card, so he's the only one earning right now!)

Breakfast

Due to the sheer boredom of being a stay-at-home wife (unable to work, unable to drive, unable to go anywhere in Kansas without my husband basically!) I ended up sleeping in until midday, so breakfast was technically both breakfast and lunch.

2 x Eggs, scrambled, w/ dried herbs
2 x Slices of Oscar Mayer Turkey Bacon (2 syns)
1/2 Cup of Bush's Maple Bacon Cured Beans (1.5 syns)
1 x Slice of Wholemeal Bread (1/2 HEXB)
Mushrooms, Tomatoes & Bell Peppers, fried using cooking spray.

Dinner

Broccoli & Beef (2.5 syns)
Boiled White Rice

Snacks

1 x Dannon Light & Fit Nonfat Greek Blueberry Yogurt
1 x Apple
1 x Banana
Beef Jerky (3 syns)
2 x Light Rye Cripsbreads (1/2 HEXB)
2 x Light Laughing Cow Creamy Swiss Triangles (HEXA)

Total Syns: 9

Comments
All in all, I was reasonably happy with yesterday, considering it was my first day on plan. I was very happy with our shop though, which ended up costing around $170, but we got lots and lots of healthy, scrummy stuff (see pic below, and that's only half of it!). Excited to see what I can make with it all!

Friday 28th February

Second day on plan; decided to get up early so as not to waste a complete day sleeping again and to ensure I started the day with a proper breakfast (especially now we had all that yummy, healthy food in!) Here's how today went:

Breakfast

35g Porridge Oats (HEXB)
Dannon Light & Fit Nonfat Greek Blueberry Yogurt (F)
3 x Eggs (F)
1 x Tbsp Artificial Sweetener (F)
1 x Banana, chopped (SF)
2 x Extra Large Strawberries, chopped (SF)
2 x Tbsp Lite Pancake Syrup (3 Syns)

Lunch

5 x Dutch Yellow Baby Potatoes (F)
Sliced Beef (F)
Green Beans (SF)
0.75oz Feta Cheese (1/2 HEXA)

Dinner

(I made Slimming World 'Cajun Chicken w/ Spicy Potato Wedges and Coleslaw')

1 x Chicken Breast, w/ Cajun Seasoning (F)
200g potatoes, cut into wedges (F)
1/2 Bell Pepper, chopped (SF)
1 x Tomato, chopped (SF)
1/2 Onion, chopped (SF)
Coleslaw Vegetables (SF)
2 x Tbsp Fat-Free Mayo (1 syn)
1 x Small Corn on the Cob (F)

Snacks

1.5oz Peach Schnapps w/ lemonade & frozen peach slice (6 syns)

Total Syns: 10

Comments:Overall, very happy with today! Definitely feel like I'm managing to get a lot more fruit and veg into my meals, but without feeling like I'm missing out on anything. Admittedly, I do think that my lunch might have been a little too large for a lunch meal, but it was very satisfying! I'm surprised that I didn't have any snacks today, but for the first time in months I genuinely didn't feel like I needed them at all! It's an odd but great feeling. Also, I don't want to get into the habit of not using my syns so I allowed myself a double shot of Peach Schapps and lemonade (with my frozen peach slice - you do have to have a third Superfree foods on Extra Easy, after all! ;) )

I know that counting calories on Slimming World is a cardinal 'syn' :)P) but my husband has been having difficulty switching from calorie counting to Slimming World, and I wanted to show him that he doesn't need to keep counting calories. For one week, I am going to continue to log my food on MyFitnessPal to keep an easy track on the calories I'm consuming (but I'm not going to pay attention to it, or let it change what I eat)

Surprisingly, both yesterday and today I have found that, despite eating what I would consider a substantial amount, I have remained slightly under my old target calorie amount of 1350, without really thinking about any of it (only quickly weighing meant/potatoes) - the huge difference is that I am completely satisfied after every meal, evident from my lack of snacks today.

I wonder if this'll be the same over the whole week? I'm hoping so, as this might be the evidence my husband needs to abandon calorie counting altogether. Oh, how good it feels to be free!

Saturday 1st March

First weekend on plan, I was quite nervous to see how it would end up going! We ended up eating out for lunch, because we went to a nearby town to a British store they had there and we were far too hungry to wait until we got home to eat!

Breakfast

1 x Weetabix (1/2 HEXB)
1/2 Cup of 2% Milk (1/2 HEXA)
1 x tsp of Sugar (1 syn)
1 x Slice of Canadian Bacon
1 x Egg, fried w/ Cooking Spray
Red Peppers & Mushrooms

Lunch

Chipotle Burrito Bowl

Rice w/ Lime & Cilantro (1.5 syns)
Marinated Chicken Breast (2.5 syns)
Fajita Veg
Cheese (1/2 HEXA)
Tomato Salsa (1 syn)

Coors Light (9 syns)
Bacardi & Diet Coke (5 syns)

Dinner

Chicken Breast
Potatoes
Onions
Baby Spinach
Tomatoes
Rice

Total Syns: 20

Comments: Not too bad; I had more syns than I wanted to use, but it was nice to get out and have a couple of drinks with my husband. We picked our food without knowing the syn values before hand, which luckily didn't end up being too damaging. Since checking, I know there are healthier options at Chipotle Mexican Grill, so I'm informed for next time. My husband also bought me a ceramic pan - greatest thing in the world. I highly suggest you all get one!

Sunday 2nd March

Well, it snowed again - meaning we really couldn't go out and do anything, as the roads were pretty bad. It was definitely a crock pot meal kind of day... and that's exactly what I did!

Breakfast

2 x Weetabix (HEXB)
1/2 Cup of 2% Milk (1/2 HEXA)
1 x Tsp of Sugar (1 syn)

Lunch

Left over Chipotle Burrito Bowl from yesterday - syns were logged yesterday, most of the food remaining was free anyway!

1 x Small Chicken Breast, w/ Cajun Seasoning - added to Burrito Bowl

Dinner

Extra Trim Beef Chunks
Potatoes
Carrots
Leeks
Mushrooms
Onions
Beef Stock
Worcestershire Sauce

Snacks

Dannon Banana Creme Greek Nonfat Blends Yogurt
Walker's Cheese & Onion Crisps (8.5 syns)
1/2 Chipotle Rosa Pasta Sides
Milkybar (7 Syns)

Total Syns: 16.5

Comments:
It wasn't the greatest of days; the main meals were reasonably good, especially the crockpot stew which was made up of Free/SuperFree foods. The snacks, not so good. I'd been to a British store in Lawrence, Kansas and I couldn't resist the Walker's or Milkybar. Luckily I only bought one of each!

Monday 3rd March

Weirdly enough, I found that I didn't have much of an appetite during the day (extremely odd, especially considering it's * week this week!). I forced myself to eat, mainly because I was taking painkillers to try and get rid of a headache, and I didn't want to be ill by taking them on an empty stomach. It kind of threw me a little though; I didn't expect for my appetite to be almost non-existent!

Breakfast

Again, I slept through breakfast. Trying to get out of the habit of sleeping so late, but when you have no reason to be up, and you're stuck home all day, sometimes sleeping seems like the better option!

Lunch

1 x Bowl of left over stew from Sunday
1 x Dannon Light & Fit Nonfat Greek Blueberry Yogurt

Dinner

Burrito Bowl - Chipotle Mexican GrillLime & Cilantro Rice (1.5 syns)
Marinated Chipotle Adobo Steak (1 syn)
Fajita Veg - Green Peppers & Red Onions
Pinto Beans
Green Tomatillo Salsa (0.5)
Tomato Salsa (1 syn)
Small amount of Cheddar (3/4 HEXA)
Romaine Lettuce

Snack

1 x Thomas' Bagel Thin (HEXB)
1 x Laughing Cow Chipotle & Queso Triangle (1/4 HEXA)
5 x Grey Goose & Diet Coke (25 syns)

Total Syns: 28.5

Comments:
Well, needless to say I went a little over the top syn-wise. However, I think Monday's are going to be my 'treat night' as our local bar has excellent drink specials, and I do like a drink now and again! You can't get $2 Grey Goose anywhere else! I wasn't too disappointed though; I am trying to stick to daily syns, but looking at it as a weekly syn total, I still have plenty left, and Wednesday is weigh in day so as long as Tuesday isn't ridiculous, then I should hopefully be okay. It's my first week, time to iron out the kinks and sort it out for my second week!

Tuesday 4th March

The weather still sucks here in Kansas, although today was the first day in a while that it was above zero, so that was nice. Also, it was Pancake Day, a tradition I loved when I was back home so I decided to make pancakes for me and my American Husband. He'd never heard of pancake day, but was more than happy to have pancakes for lunch!

Breakfast

2 x Weetabix (6 syns)
1/2 Cup of 2% Milk (1/2 HEXA)
1 tsp Sugar (1 syn)

Lunch

35g Quaker Oats (HEXB)
2 x Eggs
Dannon Light & Fit Banana & Strawberry Nonfat Greek Yogurt
Strawberries, Bananas, Raspberries, Blackberries, Blueberries
2 tbsp Sugar Free Pancake Syrup (0.5 syn)

Dinner

Spaghetti
Extra Lean Ground Beef
Red Bell Peppers, Onions, Mushrooms, Grated Carrot, Tomatoes
Pasatta
Great Value 80 Calorie Hamburger Bun (4 syns)
1.5 tsp of I Can't Believe It's Not Butter! Light (1.5 syns)
0.5oz of Parmesan Cheese (1/2 HEXA)

Snacks

1/2 Cup Thai Noodle Pasta Sides
Chicken Breast Deli Meat
Dannon Light & Fit Strawberry Cheesecake Nonfat Greek Yogurt
Sugar Free Peach Jelly w/ Peach Slices

Total Syns: 13

Comments: Felt a lot hungrier yesterday, and I think I might have eaten too much pasta at dinner time. My first weigh in is Wednesday, so I'm hoping that I've at least lost something.
