Vegetarian options

Hi,

I just started SW this week and am enjoying it so far, the only thing I'm struggling with slightly is vegetarian options, especially for lunch. Can anyone recommend anything?

Loads of ideas!

Pasta in sauces, food doctor cous cous pots, cous cous with butternut squash and falafel, jacket potatoes, roll and soup, bean chilli, bolognese and pasta twists... list is endless. What do you like?
 
I'll eat anything veggie really, it's new that I'm making meals from scratch as I can't really cook. I've currently got a sweet potato in the oven :D
 
I try to make extra dinner and use it for lunch the next day or I will use my HEB on soup. Subway salads are also great and are only £2. I would also buy Tescos microwave baby boiled potato or jacket potato and have beans over them. Mug shots, savoury rice, low fat super noodles, pasta n sauce (thickened with quark) quorn chilli with wedges for only 2.5 syns, asda canned vegetable chilli is syn free and so is their meat free bolognaise. Lots of different options :)
 
Like Samantha26, I often take dinner leftovers to work as we have access to a microwave. My other go-to option (which I have cold) is couscous salad. You can put anything you like in it, but I usually add a combination of some of the following: chickpeas, cherry tomatoes, spring onions, sliced pickled chillies, pickled onions, cucumber, grated carrot, green lentils, celery. I keep a bottle of Kraft fat-free dressing (syn-free) in the fridge at work and add that sometimes. You can also grate cheese into it as a Hex A.
 
Thanks everyone I have some Cous Cous so gonna try that and also a lot of quorn. Does anyone know the syn value of a Linda McCartney veggie sausage?

Original 2 syns each, Italian 0.5 syn each and red onion and rosemary are free :)

The red onion ones are lovely! I can't get them very often round here, so on the odd occasion when I do see them I buy in bulk - there are currently six boxes in my freezer!

Same here, I bulk buy them and sainsburys meat free quarter pounders :) love having the burgers with salad and fried onion in 2 toasted Wholemeal rolls :) that was tonight's dinner
 
I don't think I've ever seen the red onion ones but I'm going to go via Sainsburies on my way home from work tonight and have a look :) I'm thinking tonight of having them with halloumi in some sort of pasta :)
 
I have to give a thumbs up for the Red Onion and Rosemary sausages. They are lush for meat free sausages, and even better if they've been barbequed!
