200 calorie Shepherds Pie - Delicious!!!

I have also put this in the recipe STICKY but it is too good not to make sure everyone sees it. I also sometimes have it on up days.

695 caloriesfor the whole recipe. It would easily do4 good sized portions at 174 calories each. I was starving though so I ate 1/3 of it for 232 calories.
I usefrylight to fry everything so I add 10 cals for that.
200g quorn mince (210)
2 carrots (58)
2 sticks celery (10)
½ tin of tomatoes (46)
1 tbsp tomato puree (13)
1 onion (30)
1 cauliflower (122)
1 leek (50)
1 knorr beef stock pot (45)
2 oxo cubes (40)
2 tsps Marigold swiss boullion vegetable stock (32)
30g lightest Philadelphia (29)

1. Chopall the veg up.
2. Putthe onion, carrots and celery in a pan and fry on medium heat for 10 mins.
3. Addquorn mince. Fry for 1 min.
4. Addtomatoes and tomato puree. Stir.
5. Addbeef stock pot, oxo and 1tsp of boullion. Pour in some boiling water until the sauce is at the consistency thatyou like. Simmer for 10 mins.
6. Boilthe cauliflower for 10 mins. Drain it.Add Philadelphia, 1 tsp of boullion and black pepper and mash.
7. Transferthe mince into a baking dish. Put thecauliflower on top.
8. Frythe leeks and put them on top of the cauliflower.
9. Bakeat 200c for 20 mins.
 
I could "like" this a thousand times!!!
