Red Day a lovely cod recipe

Just had this for tea and it was very good! Just thought i would pass it on as i know lots of you are into fishy weeks :)

Thai-Style Cod with Spicy Tomato Sauce

1 pound cod fillets, cut in 4 pieces
2 tbs fresh lime juice
fry light
1 large onion, halved and sliced
4 cloves garlic, minced
1 tin tomatoes
1 tsp ground ginger
1 tsp soy sauce
½ tsp salt
1 tsp chilli flakes

1. Place the fish and lime juice in a large sealable plastic bag. Refrigerate while making the sauce.
2. In a large, nonstick pan, spray with fry light and saute the onion until tender. Add the garlic and saute until lightly browned.
3. Stir in the tomatoes, ginger, soy sauce, salt and chilli flakes. Place fish and lime juice over the tomato mixture. Cook covered, until fish is opaque in the center, about 10 minutes.
4. Transfer fish to a plate, cover loosely to keep warm. Bring the tomato sauce to a boil and boil uncovered until the sauce thickens slightly, about 3-5 minutes. Serve the fish topped with the sauce.
