What I absolutely love is chopping loads of vege, onions, leeks, peppers, mushrooms, etc. Frying all of them, then add a cup of rice, 2 cups water and a chicken stock cube (I like knorr). Cook untill water is absorbed (I normally try a bit to check that the rice is cooked cos I like mine softer than usual) then I stir in cheese until it's melty... yum!
I normally put a bit of soya sauce on.
I normally have this for dinner so don't put any meat in but at tea time you can easily put in some low fat sausages, chicken, bacon, anything.
Bacon makes it realy yummy. I use normal rice btw cos I prefer the texture to rissoto or anything.
