well, really really yummy. I made it free (doing the onion in fry light rather than olive oil), I also put in 2 red chillis (deseeded) rather than chilli powder, I put them in at the same time as the peppers. Replaced the eggs with tofu, and it came out quite well. I kept it in the oven for 40 mins, I think could have done even longer for a even crisper top but I was hungry! lol.
