Ooh that mexican bake looks yummy, I might have a go at that today, but make a vegan version replacing the eggs with tofu - I'll post how it comes out!

well, really really yummy. I made it free (doing the onion in fry light rather than olive oil), I also put in 2 red chillis (deseeded) rather than chilli powder, I put them in at the same time as the peppers. Replaced the eggs with tofu, and it came out quite well. I kept it in the oven for 40 mins, I think could have done even longer for a even crisper top but I was hungry! lol.

On a green day I'll often cook chopped carrot & onion in stock, add a tin of lentils until warmed through, drain, place in the lid of a casserole dish, add sliced tomatoes and sprinkle with grated cheese (sometimes 2 portions of HEA) and grill until cheese bubbles and toms are warmed - I would normally have a warmed HEB pitta with it....Mmm, that's tomorrow's dinner sorted - thanks!
