Aubergine - ideas?

Layered with a passata and veg based sauce instead of pasta like a lasagna is nice. Also aubergine curry is nice.

I cut it up into 1cm thick slices, spray with frylight and cook on the griddle pan until cooked through and nicely charred. Do courgettes and peppers in the same way and serve with couscous. Very summery flavours.

You would be better looking in the recipe sub forum - you can do a search for recipes with particular ingredients. Thats also the best place to post questions about recipes as they tend to get lost in the main forum
