Bean & pasta stew with meatballs

Serves 4 - 1 syn per serving :)


8 sausages (I used Sainsbury's extra lean cumberland sausages - 0.5 syns each - or use quorn sausages on a green day)
2 onions finely chopped
3 celery sticks, diced
2 carrots, diced
3 garlic cloves, chopped
400g can chopped tomatoes
1l chicken stock
175g pasta
410g can cannellini beans, rinsed
Fry light

Peel the skin off the sausages, and roll the meat into small meatballs. Fry in a non stick saucepan until browned, around 10 mins. Remove from pan and set aside.

Fry the onions, celery and carrots for 10 mins until soft. Add garlic and cook for 1 minute more.

Add tomatoes and stock; bring to boil and simmer for 10 minutes.

Add macaroni and meatballs, simmer for 10 mins until pasta is cooked. Stir in beans and heat through. Season, mix in parsley and serve.
