blackened chicken or salmon

    Diet:
    slimming world
    2 tsp coriander seeds 2 tsp cumin seeds 2 tsp black peppercorns 2 garlic cloves, crushed 2 tsp dried oregano 4 tsp paprika 2 tbsp olive oil 4 skinless chicken breast fillets, about 150g each SALAD: 1 avocado 4 tomatoes, sliced 400g can borlotti or pinto beans, drained and rinsed 1 tbsp lime juice 1 tbsp olive oil 2 tbsp chopped flat-leaf parsley TO SERVE: lime wedges
    2 tsp coriander seeds 2 tsp cumin seeds 2 tsp black peppercorns 2 garlic cloves, crushed 2 tsp dried oregano 4 tsp paprika 2 tbsp olive oil 4 skinless chicken breast fillets, about 150g each
    serves 4 ( 1 syn on original and EE)
    2 tsp corriander seeds
    2tsp cumin seeds
    2tsp black peppercorns
    2 crushed garlic cloves
    4tsp paprika
    2tbs olive oil ( 4 syns)
    4 skinless chicken breasts/ or salmon

    put the coriander, cumin and peppercorns and garlic into a pestle and mortar or hand held blender and grind down then add paprika and olive oil to make a paste. Smear paste onto one side of the chicken breast/ salmon fillet. Heat up frying pan and spray with frylight place chicken/salmon paste side down and cook until blackened or place in the oven and bake.
    Serve with a salad with lime juice and corainder dressing.
