My mom made those all the time too! She would mince scallions in also. Haven't had those for ages and a perfect pv snack. Wonder why celery isn't allowed always. Seems like it can't have any carbs.
Wonder if the same could be done with rhubarb? As a kid I always ate it by dabbing the end into sugar, loving the sweet tart together. I've been toasting oat bran, mixing with stevia and cinnamon and dipping in that, streusel like. Thinking spreading instead with nf cream cheese, dusting with the cinnamon, stevia. Maybe adding some vanilla extract to the cream cheese before?
