Green day, doing pasta and roasted veg for tea - fancy a little sauce with it - thought there might be something "creative" I could do with the Laughing Cow triangles - any ideas please?

Welcome to the forum. Hmm, I don't really eat laughing cows so can't really help you. It's quiet in here tonight, but no doubt someone can help you out tomorrow (but I guess you've already eaten your tea now). Oh well, always next time.
