Chicken and parma parcels......Alli diet plan book

serves 2.....228cals....6.1g fat per portion


250g (2 small) chicken breasts
40g frozen chopped spinach, thawed and drained
grated zest of half a lemon or lime
20g spring onions, finely chopped
50g extra light soft cheese
1/2 tbsp chopped parsley
grated nutmeg
56g (4 slices) parma ham

1) preheat oven to 190c/170c fan/GM5
2) make horizontal cut in chicken breast to make a pouch in flesh
3) in a bowl mix spinach,zest,spring onions,soft cheese, parsley and grated nutmeg
4) spoon half mixture into pouch of chicken breast and repeat with other 1
5) wrap 2 pieces parma ham around each chicken breast, secure with cocktail stick or string
6) lightly spray ovenproof dish with oil, bake for 25-30 minutes until chicken is cooked

serve with baby new potatoes or green salad

not suitable for freezing but can be kept in fridge for 24hrs
