chicken biryani syn free :)

    2 cubed chicken breasts
    1 large onion or 2 medium onions
    2 tbsp medium curry powder
    1 packet of boil in the bag rice
    700ml of veg stock using veg stock cube
    frozen peas
    use a pan/pot which can be transferred from the hob to the cooker


    Preheat oven to 200 c/ gas mark 6

    Brown the chicken in a frying pan with frylight then set aside.

    Brown the onion for 1 minute then add the curry powder.

    Empty the rice from the bag to the onion, add the chicken, add the stock and bring to the boil.

    *I sometimes add red peppers or other veg in at this stage. also sometimes leave the chicken out altogether.*

    Cover the pan and bake for 30 mins until all the stock has been absorbed and rice is cooked.

    stir in the peas and leave the rice to stand for a few minutes.
