I bought the Itsu coconut flakes (raw and natural coconut)
It's 6 syns on line but fresh coconut is also in the nuts and seeds section of the HEB - wondered if this counts?

I think its to do with the drying process changing the composition of the coconut, in the same way that dried apple slices are synned but fresh apple is not.
