Coleslaw

    I have just made my version of coleslaw using Laughing Cow Wedges melted in a microwave and beaten until smooth and used instead of mayo, and it's out of your daily allowance.


    Pete’s Coleslaw




    Ingredients

    1 Small White Cabbage
    1 Spanish onion
    1 large Carrot
    Up to 6 Laughing Cow Low Fat Wedges


    Method



    Shred all the vegetables to the same size and mix together in a serving bowl.

    Start with 2 Laughing Cow Wedges, put into a microwave proof bowl with a Tablespoon of warm water, cook for 1 minute.

    Remove from the microwave and mix to a smooth paste, add to the vegetables and taste, if you want a stronger cheese taste add up to 6 Wedges, each 2 mixed with 1 Tablespoon of water and microwaved.

    Season with salt & Pepper and Enjoy!
