    Found this on the South Beach board posted by Watergirl... I've adapted for Dukan and its still yummy!

    Creamy Chicken Florentine Soup

    This soup is really rich and creamy, as well as filling.


    Ingredients
    • Olive oil rubbed pan
    • 1 small onion
    • 2 cloves garlic
    • Salt and pepper to test
    • 280g spinach (can use thawed frozen for ease)
    • 2 pre cooked chicken breasts, cubed
    • 60g Extra Light Philadelphia cream cheese
    • 750ml low-fat chicken stock, low salt ideally
    • 1 tsp cornflour (optional to thicken) - dilute in water before adding to soup
    Method
    Fry onion and garlic gently until it softens.
    Add spinach and chicken until heated through.
    Add salt and pepper.
    Add cream cheese until it melts (turn heat right down for this).
    Add chicken stock and cornflour.
    Cook until it reaches boiling, then simmer for 5 minutes.
