Does anyone have recipes for low fat diabetic ice-cream?

I need to lose weight... but more importantly so does OH and he's diabetic. I've just ordered an ice-cream maker so would love to pick the brains of you lovely people for recipes I can use?

I guess non of you like ice-cream??? I just experimented with 3 pots of mullerlight strawwberry yogurt, 1 pot of elmlea light single, a pot full of semi-skimmed milk and a desert spoon of granulated sweetener. Took 40 mins in the ice-cream maker and tasted YUM!!
