Just thought I would share this little gem that I cook very regularly.
Take a salmon fillet (or any fish of your choosing - works well with whole fish as well) and create a parcel with tin foil.
Before you seal the parcel put generous amounts of salt, cracked black pepper and fresh parsley over the fish. You can also use lemon juice with fillets but I'm not really a fan. What I do like doing is chopping up some garlic for the whole fish (Sea Bass is fab).
Then simply seal the parcel and pop it in the oven for 12-15 minutes.
The fish will cook evenly and you will have a lovely bit of jus in the bottom of the foil packet when you take the fish out which you can drizzle over salad or vegetables.
