Extra Easy: Baked Sweet Potato

Hey

I'm thinking of having a baked sweet poato tonight for tea, but I don't know what to have on it. I usually have beans or low low cheese, I don't know how this would taste with the sweetness of the potato.

Any advice is appriciated

I usually scoop out and mash up the middle with some cheese, bacon and paprika before putting it back in the skin, that way you get the better flavour and texture and saltiness from the bacon without it being weird :) then just put any extras like salad or beans to the side instead of in it xo
 
Do you eat the skin of a baked sweet potato? Just curious. I never have, to be honest I've never baked one in the akin, but I've always wondered whether they're ok to eat or not?!
 
I do sweet potato wedges a couple of times a week. Skin left on, spray of fry light, sprinkle paprika & bung in the oven at 200 for 40 mins. Delish! Actually prefer them to white potatoes now.
