Extra Easy: Cutting Visible Fat of Meat?

Hi everyone, this question is probably a bit of a no brainer but I just want to get this right since I have never followed SW before. Do you have to cut visible fat of meat before you cook it or can you do this afterwards? I know you'd have to do it before cooking the likes of chicken breasts since you can't always see the fat after it's cooked. What I am thinking here is sirloin steak. I don't like fat on meat anyway and would normally trim visible fat before cooking but I don't with steaks. I just cook it and leave the fat.

Thanks Jebbie, I did that anyway and saved me from having to cut around the fat while eating it and turned out to be more enjoyable. ;)

I always do it before but it drives my mad doing it, especially on bacon :)
