Favourite sauces or marinades

Sweet Chilli sauce is one of my favourites. This makes a really nice sauce but be careful it goes very sticky extremely quickly and you end up with virtually no sauce if you don't keep an eye on it:

SW Thai Chilli Sauce

4 red chillies
1/4 tsp salt
189ml white wine vinegar (the recipe said white vinegar but I only had white wine)
8 tbsp sweetener

1) Deseed the chillies and chop them roughly. Blend them into a rough paste (I used a hand blender) then just put to one side for a min.

2) Add the vinegar, salt and sweetener to a pan and bring to the boil stirring constantly.

3) Once boiled, simmer until liquid starts to go thick then add the chilli paste and stir until combined.

4) Add to chicken or whatever other food you fancy and enjoy!
