Cruise PP Fish (~Salmon) with a Mustard crust (contains Oatbran)

Hi, tried a new recipe tonight and it was delicious. Inspired by:
Mustard-crusted salmon with celeriac mash recipe - Recipes - BBC Good Food

Very simple and quick and very tasty too! Remember to count the oatbran in your daily allowance.

  • 2 tbsp oatbran
  • 1 tbsp lemon juice (1/2 lemon)
  • 1 tbsp chopped dill (fresh really is best)
  • 1 tbsp wholegrain mustard
  • 2 skinless salmon fillets

Place Salmon onto lined baking tray, sprinkle with a little extra lemon juice. Mix first 4 ingredients, and press onto salmon fillets. (A bit messy / crumbly...) and bake in preheated oven at 200C Fan for about 15 minutes (my fillets were quite thick so I think I gave them 20mins)

It was gorgeous. I will be having this again - also a good way of getting the oatbran. I might try it with white fish next time.
