Frugal February (and March) Food Diary

Having joined the 'Frugal February' challenge on the off topic board, I thought I'd start a food diary to log my progress.

Just to fill you in, the aim is to spend as little on food etc as possible this month - I've set myself a budget of £100, which is a lot less than the usual £500+ we spend in the supermarket every month for a family of four. We do, however, have a ridiculously well stocked freezer and cupboards, so we should be able to live off that for the month (and probably quite a lot of March too). We go on holiday at the beginning of April, so if I can stick to £100 a month for the next two months that will save us £800 to pay for it!

As we have just stocked up on things like toilet roll, dishwasher tablets, washing powder etc, the plan is not to go to the supermarket at all this month. I'm terrible for bulk buying bargains (hence the well stocked freezer!), so think I'll do much better if I get the fresh bits and pieces we need from the village high street, to avoid temptation.

I've just done a 'kitchen audit' - below is the list of what I've got in. I'll update it as I use it and hopefully it will dwindle to nothing by the time we go away (good opportunity to defrost the freezer!)

Holy crap, that is A LOT of food lol!!! I didn't really realise how much was in there until I wrote it all down. Should keep us going for a couple of months with only minimal ups of fresh stuff like milk, veg, bread etc, and a few of the 'extras' the kids like (yoghurt tubes, baked crisps etc). Looking forward to this!
 
Not the most successful start to this challenge today. Having lovingly prepared a chickpea, chorizo and cous cous salad last night, I then promptly went and forgot to take it with me this morning. So £3.45 on an M&S meal deal. D'oh!

Still, did better this evening, with a SW friendly lamb curry and basmati rice.

Quick recipe - gently brown some diced lamb (or pork, beef or chicken etc) in a deep frying/saute pan. Add some diced onion, red pepper, mushrooms (or any other suitable veg you have - aubergine works well) and soften. Add a tin chopped tomatoes, a squeeze of tomato puree and curry spices (I use a mix of shop bought curry powder, garam masala and cumin, but experiment). I also add a teaspoon of honey. Then top up with stock. Simmer on the hob, lid on and stirring occasionally, for about 20 mins, until the tomatoes have broken down. If it is too runny, take the lid off for the last few minutes. Take it off the heat and stir through a good dollop of fat free natural yoghurt (or fromage frais) and serve with a spoonful of yoghurt on top.

Wow - that's a great idea to use everything up.... it's funny how much stuff you can end up with in your cupboards isn't it. I've tried to be a lot better at this - i order my shopping on line and make myself go through the list two or three times now to see whether it's something i need for the weeks' food or whether it's something i've just added because i thought that'll be nice!!! Look forward to seeing all the things you make and how you get on x
 
Ok, better day today. Yummy seafood pasta using some fish pie mix, broccoli, mushrooms, onion, red pepper and a sauce made from Philadelphia extra light for lunch. Then roast chicken for tea, with plenty left over for tomorrow's dinner. Feeling motivated by this challenge to save some £££s and lose some lbs this Feb.

Hubby is away today, so me and the kids are having salmon pasta (he doesn't like fish). Had a good couple of days - takeaway last night (OH paid ;)), but the rest of the week has been very good - used up the rest of the roast chicken on lunches and kids dinners, and made myself a very yummy bacon and mushroom risotto when I got home late on Wednesday night.

Veg box arrived yesterday, and I picked up £17.50 worth of top ups (milk, bread, bits for the kids etc) from the Co-op. Confident I wont need to buy anything else this week.

Made mini carrot cakes with the littler today (I forgot to add the baking stuff in the top of the cupboard to the list, but I have plenty of sugar, flour, baking powder as well!). It was my first go at them and much to my amazement they came out really well. Usually my cakes and biscuits are like bricks! Not SW friendly, unfortunately, but yum. Will post the recipe later if I get a chance.
