I make a roasted veg & pasta bake in big bulk at the start of the week and freeze in tupperwear so I can take one a day and re-heat in the microwave - does the trick for me:

Roast lots of chunky vegetables (red peppers, red onion, courgette, aubergine) with some garlic and fry light.
Make a sauce with tinned tomatoes, passata, a sprinkle of chilli powder.
Cook the pasta and mixed everything together.

Free on a green day and delicious! :)

Do you like quorn, it's fab for green days. You could make a quorn chilli (onions, peppers, mushrooms, kidney beans, tin of chopped toms, vege oxo cube, salt, pepper, chilli powder to taste and quorn mince....in a jacket [potato or on rice, free on a green day).
