Cruise PV Herby meatballs with chilli and sweet pepper sauce

Dry fry onions, garlic, red pepper and green pepper (or yellow or orange depending on what you've got)
Add chilli flakes to desired heat
Add one tin chopped tomatoes; then fill tin with hot water and add to sauce
Season with salt and pepper and let it bubble

Get your mince (beef, veal or turkey) and loosen it up with a fork
Add salt, pepper and herb of your choice (thyme is fab and dried works almost as well as fresh)
Mix thoroughly and fashion into meatballs - not too big, about 10 from a 450g pack of mince

Add to the bubbling sauce. Cover with a lid or some tin foil and let cook for about 10 minutes. Remove lid and flip meatballs over.

Replace lid and let cook until the sauce has reduced down and meatballs are cooked through (about 20 minutes).

Eat straight away, for dinner tomorrow or freeze in portions.
