I finally managed to make a lovely mix a mousse but I had to leave it in the fridge overnight. Is this bad and does it lose its vitamins?

I wouldn't leave it too often as yes I'm sure it does lose some vitamins but it won't hurt you occasionally.

overnight? Thats not setting quick enough then?

Keep a bottle of water in the fridge for making your mousse, so its ICE cold. It really does help it set much better.

I put mine in the freezer for 10 minutes after making it rather than the fridge so it sets better.;)

It wont lose it's vitamins or minerals. Should be fine in the fridge until you are ready, though I wouldn't leave it too long as the texture can deteriorate.
