ketosis - again

Not at all. If you had to eat something you have chosen the ideal thing!

What will knock you out of ketosis is carbohydrates. It is the carbs that the body will use for energy in preference to fat burning (ketosis) because carbs are far easier to convert to glucose than fat, and the body always takes the easiest route to what it needs.

Forget eating the chicken. As long as it had no skin on it it will have done little damage, and is unlikely to have knocked you out of ketosis (depends on the way it was cooked of course!).

Put this behind you, drink the water, and move on.
