This would probably freeze well - ice cream sandwich!

5 eggs, separated
sweetener to taste
3 tsp cocoa
pinch salt
1 tub ff quark
1 sheet gelatine
vanilla extract or vanilla bean

Cream filling: Place gelatine sheet in small saucepan and add about 3 tbsp water, let sit for 10 minutes. Meanwhile, mix quark with sweetener to taste and vanilla. Gently heat gelatine in saucepan, whisking constantly until completely dissolved. Remove from heat, add a dollop or two of quark mixture and whisk to incorporate, then pour into remaining quark mixture and whisk until smooth. Put in fridge.

Cake: Beat whites until stiff. Mix yolks with sweetener to taste, salt and cocoa. Add in whites and combine. Pour into small or medium pan lined with grease-proof paper and bake about 10-12 minutes in oven preheated to 190C. Let cool. Cut in half. Spread quark on one half and top with other half. Let set in fridge. Alternatively, eat immediately :)

You could probably skip the whole gelatine thing, I just like the cream a bit thicker :)


NB: definitely better after sitting in fridge a few hours!

UPDATE: This was fabulous after sitting in fridge overnight! Do try not to eat right away, have it the next day. Sooo worth it :)

Hi that's sound very nice!
But how many grams is the quark and how many portion would it be?
 
Sorry, I wasn't being purposely obtuse :) The quark is a 250g tub, and as the cocoa is a tolerated item this should be 3 days' worth so cut it up accordingly. :)
