Lentil and Quorn Sausage Stew

    THIS CAN ALSO BE ADAPTED TO A SLOW COOKER RECIPE :D

    Serves 4
    Ingredients

    • 1 large onion, finely chopped
    • 2 cloves garlic, crushed
    • 200g tinned tomatoes
    • 300g green lentils
    • 2 tbsp paprika
    • 100g bacon, diced
    • 100g quorn sausage, cut into small chunks
    • spray light
    • Salt and pepper
    Method: How to make lentil and sausage stew


    1. Firstly soak the lentils in water for one hour.
    2. Heat a casserole dish with spraylight over a medium heat, add the onion, bacon, quorn sausage and garlic; cook and stir until golden brown.
    3. Stir in the tomatoes, water, paprika and season with salt and pepper.
    4. Drain the lentils and stir into the casserole, cover with water, bring to the boil and then reduce the heat to low and simmer for 30 minutes.
