Low fat baking recipes?

    Hi everyone,i am doing fundraising for Bowel Cancer UK.
    One of my fundraising activities is to bake cakes and sell at work. This has made over £200 so far in a month and i am very popular.

    However as people are possibly putting on weight because of me i am after low fat cake/tray bake recipes if anyone has any?

    Hi Vicky... the old trusty carrot cake with philly extra light topping with orange zest, could be handy. Delia Online should have a recipe that can be tweaked.

    Could you do a standard fat free swiss roll sponge, then roll it up with the philly extra light blended with a little icing sugar - or half philly, half yoghurt? Could add some mixed summer berries inside and a little sugar free jam, and it'd look really swish. Carve it into slices as you sell, and you could probably charge a fair bit for it! :)
