Lunch Ideas for my Freezer

Hi Everyone;

Last weekend I made a large pot of pasta sauce that I found on here, it was delicious! I froze it and have been serving it with chicken or pasta through out the week and its stopped me 'falling off the wagon'.

Does anyone have any ideas that I can cook in bulk over the weekend and defrost throughout the week to eat for lunch? Its hard to find time to cook lunch and dinner in the evening as I'm out of the house from 7:30am-8pm and I'm just too tired!

I like pasta and meats!!!! Yum!

I make a big bowl of cous cous and just keep it in the fridge. I get just plain cous cous , make up some chicken or veg stock with a stock cube and boiling water and just pour it on the cous cous, meanwhile I fry some mushrooms, chicken tikka slices or whatever else I have in the fridge to use up (I fry in frylight) , and when done I put in the ready cous cous and just stir fry for about 5 mins and hey presto ready to eat and keep.
