Middle Eastern Chickpea Stew
Ingredients
5 spray low-fat cooking spray
1/2 medium onion(s) sliced
1 clove garlic crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cinnamon
1/8 teaspoon ground cumin
1/8 teaspoon pepper red flakes, crushed
1 red pepper chopped
Handful of mushrooms chopped
400 g canned tomatoes chopped
120 ml fresh stock vegetable
220 g cooked chick peas rinsed and drained
Instructions
Coat a medium-size pot with cooking spray; heat. Add onion and garlic and sauté for 5 minutes, stirring frequently, add pepper and mushrooms. Add salt, pepper, cinnamon, cumin and red pepper flakes. Sauté for 30 seconds more. Add remaining ingredients and simmer for 10 minutes. Optional: Top with a tablespoon of fat-free plain yogurt just before serving.
No reason why you can't add some meat to this - lamb would work well.
