Mothers Day menu suggestions?

I have invited my mum and her hubby to ours on Mothers Day as want to have low syn/ no syn food if possible.
I'm not sure what to make though! I don't want anything too fussy as am out the night before and may have a few drinkies but would like something nice anybody got any ideas?

u cud make ur own kfc chicken style strips with bbq sauce i had it last nite and felt like i was cheating but i wasnt was all free (did use a few slices of brown bread and processed it for breadcrumbs tho)

you could do chicken breast stuffed with philly and bacon wrapped round or maybe homemade burgers with sw wedges and salad is lovely

I'm thinking of making, Asda Extra Special Lamb Shanks served with mash potatoes, greens & cabbage. For pudding I'm gonna try the low syn lemon sponge cake.

Im doing roast leg of lamb with garlic & rosemary. Sw roasties, carrots, cabbage, leeks & caulliflower, small amount of gravy (1-1/2 a syn)
Then for desert i will do some home made profiter rolls(3ish syns) with a chocolate sauce and anchor light cream(2 ish syns). All in all im looking at 6 syns MAX for me on mothers day x

I'm going to take my mum a SW buffet (we're doing SW together). I think I'll take a couple of quiches, some cold meats, potato wedges, Joes sausages on sticks and lots of salad stuff. Followed by trifle! Will keep a keen eye on this thread for any other suggestions! x

Hubby has just offered to cook a roast which he has never cooked before so could be more stress than cooking myself lol but got me out of it anyway
I think will probably do a pud from the deserts book to go with it x
