just made another batch up to put in freezer so thought id share my recipe
free on a green day
Winter warmer curry
½ Butternut squash
1 Sweet potato
1 Onions
2 large Carrots
1 Parsnip
2 stalks Celery
Green beans
1 Cauliflower
handful Green lentils
2 cloves Garlic
Tin toms
Dried coriander or fresh
Pinch ginger
Hot curry powder to taste
Hot water
2 x vege oxo cubes
Fry of garlic and onion in fry light add all chopped veges (except cauli) sauté until slightly softened (5mins). Add lentils, tomato purée, tinned toms, oxo cubes and hot water to required thickness (top up whilst it reduces) Cook until all veges are soft add cauliflower and cook for further 5 mins. Makes loads so you can fill you freezer. If you want to make smaller quantities reduce the amount of veges.
