need to make meals in advance

Having little op on my right wrist on Tue - as i'm right handed i will really struggle to do anything so need to make the weeks meals in advance so my oh can just warm them up.
We mainly do Green days with couple of red days a week & occassionally EE

So far got:

Quorn bolognaise
Mixed bean chili
Meat free meatballs in fresh tom sauce

But run out of ideas:
Anyone got any good suggestions (got chicken breast, chicken legs, in freezer / potatoes / pasta / mushrooms / red onions / lots of spices etc)

Curries which are tomato based seem to survive being frozen and reheated pretty well, as does diet coke chicken if you're a fan of that :)

You could also just oven cook the chicken legs and serve with salad - if you bought the ready bagged salad it wouldn't take any prep?
 
Going to make a cottage pie & something with diced turkey & mushrooms (if i cook it mon, then we can it tue night - oh would only needs to make some pasta to go with it.)
