New Quorn Burrito's and Enchiladas

Dare I even ask how many syns these would cost?

I saw them today in Tesco, in the freezer section. I LOVE Mexican food so much. I'd imagine they're pretty high tho :(

I don't know the syns I'm afraid but I love Mexican too and developed this recipe by adapting my old, very high calorie, one. I sometimes serve this with guacamole but I make it with peas instead of avocado and whizz it up with a hand blender. It just needs a bit more garlic and lime than usual. Also, if you combine fromage frais and quark it's pretty close to sour cream. Yum!


Slimming world enchiladas

Serves 4, free on EE

[For the sauce]
500 g passata
1 tsp salt
1 tsp chilli powder
1/2 tsp sweetener
1/2 tsp cumin
1/4 tsp oregano
2 tsp minced onion
1 tsp paprika
2 cloves garlic

[for the enchiladas]
16 lasagne sheets, cooked and cooled
2 chicken breasts, in strips
2 peppers, in strips
2 onions, in slices
160 g reduced fat cheddar cheese, grated

[To serve]
Salad
Fat free fromage frais

[For the sauce]
Whizz all ingredients together.
Heat gently.

[For the enchiladas]
Cook the peppers and onions until colouring, add the chicken and cook until browned.
Add half the sauce to the pan and heat together.
To the other half of the sauce add 80g of the cheese and heat until melted.
Fill the lasagne sheets with the filling and roll up, placing join down in a dish.
Pour the cheesy remainder of the sauce over the top and sprinkle the remaining 80g cheese on top.
Cook for half an hour at 180°C or until the cheese is bubbling.
Serve with fromage frais and salad.

To answer your original question, the quorn burritos appear to be 11.5 syns according to the app - boo! I fancied trying one too :(
