Pad Thai tofu with broccoli and noodles

    Goal Weight:
    Pad Thai Noodles with Tofu

    Serves 2

    Green – 1 syn per serving


    1 pack tofu cubed
    2 tablespoons Tescos Thai Green Curry Paste (2 syns)
    1 clove garlic crushed
    ½ small red chilli deseeded and finely chopped
    ½ onion finely chopped
    1 tablespoon soy sauce
    Juice of ½ lime
    Noodles (probably about 60-80g per person)
    Fresh coriander leaves lightly shredded
    Small head of broccoli (optional)


    1. Cube the tofu and coat with the curry paste, leave for 10 minutes to marinate. Then bake in the oven for about 20 minutes until golden brown (I spray with frylight to stop sticking and to enhance the crispiness.
    2. Put noodles onto cook
    3. heat wok with Frylight and add onions, garlic and chilli and fry for 3-4 mins or until the onion is golden brown (add broccoli at this stage if using).
    4. Add tofu pieces.
    5. Pour over soy sauce and lime juice, toss for 2-3 minutes.
    6. Either add the noodles to the pan or serve the tofu ontop of the noodles garnished with the coriander leaves.
