Pepperonata with baked eggs...Alli diet plan book

serves 2...250cals and 13.4g fat per portion...11.9g protein....carbs 20g of which sugars 18g...fibre 6.4g

1tbsp olive oil
160g onion sliced (medium)
2 cloves garlic crushed
480g(3 medium) peppers any colour sliced
340g (4 medium) tomatoes,skinned and quartered
2 large eggs

1) preheat oven 190c/170fan/GM5
2) heat oil in pan fry onion and garlic until lightly browned
3) stir in peppers and tomatoes and cook for 15 minutes, stirring occasionally
4) tip mixture in lightly greased shallow dish and make 2 nests for the eggs
5) break eggs into each hollow and put in oven for 15-20 minutes until eggs are set
6) serve at once
