Hello hello! Just made some yummy gravy to take to my mums in a bit for a Sunday roast! Thought I'd quickly share the recipe on here :)

Ingredients (Serves 4)

2 Red onions, sliced
30g Apple sauce (2 syns)
100mls No added sugar apple juice (1.5 syns)
2 Stock cubes or pots, one chicken and one beef
600mls Boiling water
A splash of balsamic vinegar
A splash of cyder vinegar
Salt, pepper and sweetener to taste

Step 1. Brown off the onions using fry light in a heavy duty pan. You want to really caramelise them as much as possible, adding the vinegars and some sweetener half way through.
Step 2. Make up the stock using both chicken and beef stock in the same jug with 600mls of boiling water. If you can find pork stock, go for it. If you fancy vegetable stock, go for it. The recipe was born to be personalised.
Step 3. Add the stock, apple juice and apple sauce to the pan and heat on high for ten minutes before simmering for about 45 minutes. The amount of time you simmer it for is up to you, but the longer you leave it the more intense it gets.
Step 4. Blitz the sauce using a hand blender until smooth. Taste and season to your liking!
