Potato salad with tarragon and mustard 77 calories 0.4g fat per serving

    Serves 8

    675g new potatoes washed, scraped, cut in half and boiled in salted water until cooked.
    175g virtually fat free fromage frais
    2 tablespoons tarragon vinegar
    1 small red onion finely chopped
    ΒΌ teaspoon round turmeric
    1 tablespoon wholegrain mustard
    Salt and pepper to season
    2-3 sprigs of fresh tarragon for garnish

    In a large bowl whisk together the fromage frais, vinegar, onion, turmeric and mustard and season to taste with the salt and pepper.
    Add the potatoes and mix until well coated with the dressing.
    Pull the tarragon leaves from the stem and scatter over the potato salad.
    Serve hot or cold.
