Hello everyone, I have technically restarted slimming world, due to the epic mess, my life became, needed to really start form the beginning. So thought i would do a little food diary thread and also a bit of a food porn thread. I will be eating mostly fruits and veggies and pulses. I am on a very clean detoxifying diet atm. Nothing processed at all!. Also i have recently found out that I'm lactose and gluten intolerant so having to approach a completely new way of eating here!

I will be having some lovely organic chicken over the weekend and a lovely piece of salmon tomorrow for my dinner. Watch out for the weekend post as a very dear friend is coming down and we both enjoy nandos, so i'm making a slimming world style nandos.

Well today consisted of a goodly amount of fruit salad for my breakfast and a nice big salad for my lunch. Dinner i cooked a cauliflower and green bean curry(all free btw) served it with lots of fresh coriander and an onion salad made from, onions, tomatoes, bit of salt, chilli, and mint sauce(0.5 syn per tbsp)

Also having a sense of closure on such a difficult time for me has been liberating. Also I'm going on holiday in april so want to look a little better then I currently do :)

Morning everyone! Juice shot had and first round of exercise done(got through the i slept on the sofa bad back phase) just had my breakfast of a lovely 3 egg white only omelet with spinach and lots of pepper in it. Twas lovely, insanely low fat and high in protein and also a goodly portion of veg :). If i can get some blueberries will make my blueberry, spinach and yog smoothie tomorrow ;).. though need to get a nice dairy free yog preferably low to free syn or i might just make one alll fruit and veg. Right lots of study planned for this morning followed by a good bit of house work. Below is my breakfast :)

Time for lunch, nice big salad, a base made form watercress, rocket, cos, a few handfuls of bistro leaves, spinich and thinly cut fresh beets. Topped off with rings of red and yellow pepper, tomato, cucumber, red onion and these huge spring oinions. On the side is 4tbsp of at free dressing to dip in! And then a nice platter of fresh pineapple, mango and melon... Urmmmmmm goood eating!

Dinner time and omg it was sooo dam good but so simple and i think there in lies the magic. What i had was a oriental style veggie broth here's the recipe needed to share.

you will need
baby carrots
baby courgettes
4 garlic cloves cut into rough peices(not crushed)
2 slices of ginger cut into matchsticks
sugar snap peas
green beans trimmed
1l of veggie stock or marigold bullion(the latter is lovely)
pepper
1 red chilli, deseeded and the pith taken out
and 2 heads of pak choi

Method
Very very simple, in a large saucepan put the heat on and make sure its nice and hot, spray with a little fry light and add the baby carrots, chopped up big chunks but equal sizes, move around the pan so they dont get burnt and then add some cold water into the pan not much just enough to make it steam. Then add in the garlic, chilli and ginger and he courgettes, add a little more water cover and steam fry gently for 5 mins. Next add all the other veggie aside fomr the pac choi and add the stock, bring to the boil and then gentle simmer for 10mins, once ready to serve, place the pac choi in, to warm through, sevrve in a large bowl :) and its super tasty.

Lovely delicate stock with a proper hit of chilli
