Raspberry cupcake

Raspberry cupcake just under 2.5 syns each serves

100g raspberries (1syn cooked) could substitute for blackberries, all other fruit higher in syns per 100g)
100g self raising flour (16 syns)
100g fat free vanilla yog
1 large egg
15g sweetener
2 tsp Cinnamon

Method
Preheat oven to around 160
Grease 7 cupcake cases with frylight.
Sieve the flour into a bowl, add the cinnamon. In a separate bowl, mix together the egg, yoghurt and sweetener.
Stir into the flour and add the raspberries
Transfer into cake cases.
Bake in the oven for 20- 30mins, until golden brown.

If anyone makes these it should be 15g sweetener not 50! I make these every week now and they are so lush
 
oh wow thanks i love cupcakes :) (obviously otherwise i wouldnt be overweight) haha :)

Can I advise you edit the original post then, as of anyone sees it, they may not see the amendment on the next post down :) they sound lovely tho x
 
Just to let you know, if you don't mind using more syns per cupcake, they are even better if made with 75g of caster sugar and 8g of sweetener, they will increase the total recipe syns but rise better and have a more sponge consistency, all to do with how sugar reacts with the flour and gluten apparently!
