Red Day Convenience Lunches

    Hi,

    EE hasn't worked all that great for me so I'm going to try some Red and Green days.

    At work I have a kettle and a freezer and a microwave - any ideas what Red meals I can make for my lunch?

    I don't like fish, btw.

    My red days lunches are:
    Ham and mushroom quiche
    Chicken and bacon wholemeal roll
    Chicken and sweetcorn salad
    Leftover chilli / bolognese / curries

    Cold Meat Salad is a good one, i spicy it up and ensure i have pickles with it, such as pickled onions, pickled red cabbage, kherkins etc.
    Omelettes can be made in advance and heated up in the microwave.
    Hard Boiled Eggs
    Quorn Sausages with tinned tomatoes
    Bacon Sandwich (i cook it before and heat for 40 secs in microwave)
    Homemade soups are good

    I always cook extra for tea and then have left over's for lunch, For example last night I had Chilli Con Carne with a jacket potatoe (recipe on sw website). Then after I just made a salad from tomatoes, spring onions, radish. celery and beetroot and added that to my lunchbox which already contained the left over chilli. Yummy !!

    I do ham buttered with laughing cow x tra light obviously not butter too just a turn of phrase then rolled up.

    I haven't had bread since starting SW and not missing it at all
