    From a quick google it looks like there is about 2g carbs in one medium stalk. Sooo if I wanted to cook one stalk and make a very small portion of sweet rhubarb stewy stuff ( like the inside of a crumble) how would I do that? I'm assuming water, sweetener, rhubarb but other that that *clueless*.

    Any ideas?

    i did the same,maybe i added a little too much water,as it was a little wishie washie,but yeah it was nice.
    i had mine with fresh cream.

    I grow rhubarb but I make mine into wine.
    Just cook it just covered in water with your sweetener until soft. Yummy stuff.

    I cooked some yesterday (plant in garden going mad). Mixed it with sugar free raspberry jelly and whipped cream, it made a really yummy mousse type thing! I'm used to having yoghurt and fruit for breakfast so this made a good substitute. I only added about a tablespoon of water to about 6 stalks and 6 teaspoons of sweetener, simmer for about 20 mins.

    You could make rhubarb fool...with sweetner..:)

    Happy days :D that I just found this thread. :D
    This is the first year I have been able to pick my rhubarb.. it was too young before.
    I am growing it, also, to make wine.
    But I picked quite a bit today, when I was cutting the grass, and thought a wee bit of stewed rhubarb, with some greek yoghurt might be a lovely desert, for me later in the week.
    The rest of the rhubarb will be wine ;)

    my tip with rhubarb is as follows:

    How to stew Rhubarb:

    wash the rhubarb and cut into inch size chunks. The water from the washing should be enough to slowly steam the rhubarb in a pot (lid on, very low heat) so it keeps its shape but is nice and tender. Add some splenda and a vanilla pod / some vanilla essence for a really nice flavor. I like to have it with whipped double cream and a grating of nutmeg.

    Rhubarb trifles:

    Put the rubharb at the bottom of a glass and top with a little sugar free jelly. Once the jelly is set, top with whipped cream for an amazing fruity desert. You can make these in batches of four so you have a few in the fridge for when you need something sweet.

    Well, I just bought another four rhubarb plants online - to add to the three I already have. A tiny bit late in the planting season but not too much so. I miss fruit so much and this tart treat will hit the spot for seasons to come. Will soon be making a low carb crumble with my Timperley Early, also currently going mad in my garden.
