Salad dressing w/cashew nut butter, ginger, garlic & seame oil

This dressing is great with a chicken and cabbage salad or could be vegetarian Asian coleslaw dressing. Add few extra whole cashew nuts on top.

This recipe is exactly as I found it, however I find it a bit to sharp and makes my mouth pucker so you may need to adjust the amounts. I cut down on the vinegar and will experiment with different types. You could also add some splenda ect to cut sharpness. Holland & Barrett has cashew nut butter.

1 tablespoon cashew nut butter
4 tablespoons rice wine vinegar
juice of 1 lime
1 teaspoon ground ginger or (could use fresh)
1 tablespoon minced garlic
1 teaspoon lime zest
1 tablespoon toasted sesame oil


Just whisk everything together.
